Healthified Banana Bread
Okay so at the start of covid, we all went through that weird phase of baking banana bread nonstop, right? No? Just me? I definitely don’t believe you. Honestly, I’ve always been a huge sucker for banana bread. I mean tell me I’m wrong but I can’t think of many things better than a fresh out of the oven slice of banana bread with some butter on top.
This recipe really hits home - you can eat a slice (or two), without a worry in the world. With applesauce replacing sugar, heaps of banana, sweet notes of vanilla, honey and maple, and a salty peanut butter swirl, this loaf will have you saying “just one more piece won’t hurt!!”
This recipe is a perfect go to use for those bananas you bought a week ago to make healthy smoothies… I’m not judging you, I promise. If anything we should double the amount of bananas we buy, so that we can have a smoothie WITH our slice of banana bread. Balance is everything my friends.
4 medium ripe bananas (mashed)
Flax egg (2 tbsp ground flax seed & 6 tbsp water)
1/2 cup of unsweetened apple sauce
2 tbsp maple syrup
2 tbsp honey
2 tbsp coconut oil (melted)
1 tsp pure vanilla extract
2 tsp baking powder
1 tsp baking soda
Pinch of salt
1 tsp cinnamon
2 1/4 cups whole wheat flour
Extra add ins
1/4 cup dark chocolate chips
1/4 cup almond slivers
1/4 cup walnut pieces
1 tbsp natural peanut butter swirled on top
1 tbsp of rolled oats
Instructions:
To start, set the oven to 350 degrees. Oil loaf pan lightly with olive oil. Mash bananas with a fork. Once mashed, add flax egg, applesauce, maple syrup, honey, coconut oil, vanilla, baking powder, baking soda, cinnamon and salt. Whisk to combine. Once combined, add in chocolate, walnuts, and almonds.
Add flour and stir gently. Pour into loaf pan. Swirl peanut butter on top of the loaf and sprinkle some rolled oats as a finishing touch.
Bake for 50-60 minutes or until tooth pick inserted in the middle comes out clean.
Remove from oven and let it cool. Transfer to cutting board and slice it up!
Notes:
*If you're looking to make this completely vegan, omit honey and opt for 1/3 cup of maple syrup. If you want to go the alternative route, replace the flax egg with 2 regular eggs. Either way, you’ll be doing a happy food dance in no time :)
